But gin? It started in the bountiful 2018 vintage, when we had a little Chardonnay spare. In Champagne, they would distil into a marc de Champagne. they decided to be very British and distil it into a very special gin. the inspiration came from the botanicals in Savill Gardens, next door to the vineyard - the only privately owned Royal Garden open to the public all year round. It's full of pungent seeds, owers and leaves. They searched out the best nose in the business, with a PhD in gin, to advise them and this is the fragrant result. No Chardonnay in this release, but abundant juniper, lemon verbena, thyme, elderower. A delightful base for any G&T.
